The dessert selection at South Park Cafe in San Francisco changes with the daily menu, but usually there's an amazing tart or galette on the list - often times paired with house made ice cream.
Chef-owner Ward Little let me peek into the kitchen while he was preparing the other night's apple galette and shared the recipe ...
the ingredients.
2 cups flour
2 tablespoons cornstarch
½ teaspoon alt
½ teaspoon sugar
9 tablespoons ice water
6 oz butter, cut into small cubes
5 apples
sugar - ¾ cup approx
butter - 3 oz approx
Combine the flour, cornstarch, salt and sugar and pulse to mix.
Cut butter into the flour, then add the ice water, one spoon at a time,
and pulse until dough looks crumbly. Work the dough a bit, then chill for about 30 minutes.
While the dough is chilling, thinly slice the apples.
Preheat the oven to 400⁰F/200⁰C.
Roll the chilled dough into a thin rectangle, about 1/16" thick,
and arrange the apple slices in overlapping rows.
Bake the tart in the hot oven and once the first layer has caramalized, briefly remove from the oven to add more sugar and butter.
Bake the tart to your liking, you will know it is done when the tart edges are starting to turn golden brown ...
